Lasso Labs spins nutritious ingredients into food the way a cotton candy machine spins sugar. Its patented SpinTech system uses centrifugal force to weave fiber and protein together without the additives and high heat conventional processing requires, so manufacturers no longer have to mask bad taste and texture with fats, sugars and starches. Spun out of Harvard's Wyss Institute, SpinTech runs at commercial scale from hardware the size of a washing machine.
