MycoTechnology is a food technology which has developed a novel organic food processing platform that transforms agricultural material into functional ingredients. Their flagship product, ClearTaste®, has broad spectrum bitter blocking capabilities that reduces bitterness perception. With less bitterness, products become more palatable, which is important in sugar reduction and elimination. Their second product, PureTaste®, is a plant-based protein that has been transformed through mushroom fermentation. Fermenting pea and rice protein with shiitake mushroom mycelium improves taste, decreases aroma, and increases solubility and functionality. PureTaste is dairy-free, soy-free, gluten-free, and nut-free and doesn't contain any of the other top eight allergens recognized by the FDA that represent >90 percent of all food related allergies.
