Almost 10 percent of the food suitable for human consumption ends up thrown away. In the hospitality industry, the main challenge lies in the calculation of quantity, usage, and forecasting. KITRO has developed a solution that enables the hospitality sector to better understand where operational inefficiencies lie, using a hardware device and deep learning software to help restaurants reduce their waste. Commercial kitchens place their existing trash bins on top of a KITRO scale, above which an IOT device with a camera is mounted. KITRO’s device captures the time of disposal, weight of waste, and takes pictures of all the food thrown in the bin. The software then uses image processing and deep learning to analyze this data and determine where excess food is being wasted. By providing customers with an overview of their food waste and suggestions on best practices, KITRO can help restaurants to reduce avoidable food waste by up to 60 percent, increase their food profit margin by up to 8 percent, and reduce CO2 emissions, water consumption, and land usage.
