Tim is an Unreasonable Mentor.
Tim West, a Slow Food Chef and Food Futurist, traces his culinary roots to his grandfather, Arch West, the inventor of Doritos. His journey began with a college food poisoning incident, propelling him into the world of Slow Food and sustainable practices. Graduating from the Culinary Institute of America in 2005, he co-led the Edible Education Project, teaching cooking and farming classes while working at The St. Regis Hotel in New York.
Tim's influence grew as he represented the U.S. at Slow Food's Terra Madre and played a vital role in creating a plan for food industry carbon neutrality by 2030 at the University of Massachusetts. He co-founded Food Hackathons and advised notable companies. Tim's diverse interests include plant-based foods, sustainable packaging, personalized nutrition, and AI in food. As Global Ambassador at the Future Food Institute, he champions innovation in the food industry from his new base in Bellingham, WA.
